I just found out it is National Taco Day, thanks to LocoGringo. Since I LOVE tacos, I thought I would post a few of my favorites in honor of this special day. After a successful first meal in Mexico and a great night’s sleep, I woke up the next day with a spring in my step. As I relaxed into my second happy hour of the trip, I already couldn’t help but start to reminisce about the trip that had barely begun.
